Curry Roasted Cashews

Makes 2 cups

Ingredients

  • 2 cups raw cashews
  • 1 tablespoon avocado oil or melted coconut oil
  • 1½ tablespoons Thai & True Prik-King Curry Paste
  • 1 tablespoon maple syrup
  • ½ teaspoon fine sea salt
  • 2 teaspoons coconut sugar
  • Zest from 1 lime

Instructions

  1. Preheat your oven to 325F and line a baking sheet with parchment paper. 

  2. Spread the raw cashews in an even layer on the baking sheet and roast for 5 minutes, until lightly toasted.

  3. Meanwhile, combine the avocado oil or melted coconut oil, Thai & True Prik-King Curry Paste, and maple syrup in a mixing bowl. 

  4. Carefully transfer the toasted cashews to the bowl and stir to coat them in the curry mixture. Transfer the coated cashews back to the baking sheet and roast for 10 to 12 minutes more, until deep golden and sticky.

  5. While the cashews are still warm, sprinkle them with the sea salt and coconut sugar. Toss to coat.

  6. Just before serving, sprinkle the lime zest over the curry roasted cashews. Enjoy immediately or store for up to two weeks at room temperature in an airtight container.
