Grated Egg Curried Avocado Toast

Ingredients
- 2 thick slices of sourdough bread
- 1 avocado, thinly sliced
- 1 tablespoon Thai & True Panang Curry Paste
- 1 tablespoon avocado oil
- 2 hard boiled eggs, peeled
- Sea salt and black pepper, to taste
- Squeeze of lime juice
Instructions
- Toast the sourdough bread in your toaster oven or on the stove in a cast iron skillet over medium heat.
- Divide the avocado slices between the two pieces of toasted sourdough.
- In a small bowl, combine the Thai & True Panang Curry Paste with the avocado oil and thin with a splash of water if needed. Spoon the curry drizzle over the avocado slices.
- Using the small side of a box grater, carefully grate the hard boiled eggs directly over the slices of avocado toast. This works best with cold hard boiled eggs straight from the fridge.
- Season the grated egg curried avocado toast with sea salt and black pepper and finish with a squeeze of fresh lime juice. Enjoy immediately.
