Grated Egg Curried Avocado Toast

  • 2 thick slices of sourdough bread
  • 1 avocado, thinly sliced
  • 1 tablespoon Thai & True Panang Curry Paste
  • 1 tablespoon avocado oil
  • 2 hard boiled eggs, peeled
  • Sea salt and black pepper, to taste
  • Squeeze of lime juice


  1. Toast the sourdough bread in your toaster oven or on the stove in a cast iron skillet over medium heat.
  2. Divide the avocado slices between the two pieces of toasted sourdough. 
  3. In a small bowl, combine the Thai & True Panang Curry Paste with the avocado oil and thin with a splash of water if needed. Spoon the curry drizzle over the avocado slices.
  4. Using the small side of a box grater, carefully grate the hard boiled eggs directly over the slices of avocado toast. This works best with cold hard boiled eggs straight from the fridge.
  5. Season the grated egg curried avocado toast with sea salt and black pepper and finish with a squeeze of fresh lime juice. Enjoy immediately.
