Prik-King Curry Cod with Bok Choy

Ingredients
- 2 6-oz. cod filets, fresh or frozen
- Olive oil
- Sea salt and black pepper
- 1 tablespoon Thai & True Prik-King Curry Paste
- 2 baby bok choy
- 2 teaspoons sesame oil
- Splash of soy sauce
- Cooked jasmine rice, for serving
- Lime wedges, for serving
Instructions
- Preheat your air fryer to 400 F degrees. Pat the cod dry with paper towels and drizzle with olive oil. Season with sea salt and black pepper. Rub the cod filets with Thai & True Prik-King Curry Paste.
- Place the cod in your air fryer basket, cooking one at a time if needed. Air fry the cod for 8 to 10 minutes, until it easily flakes with a fork and is cooked to 140 F degrees inside.
- Meanwhile, preheat a lightly-oiled cast iron skillet over medium-high heat. Slice the baby bok choy in half lengthwise.
- When the skillet is hot, place the bok choy cut side down and cook for 3 to 4 minutes, until lightly charred. Flip the bok choy and drizzle with sesame oil and soy sauce. Turn off the heat.
- Serve the cod and bok choy over rice and garnish with a lime wedge.
