Prik-King Curry Salmon Bowls

Ingredients

  • 1 pound boneless, skinless salmon fillets
  • 1 tablespoon Thai & True Prik-King Curry Paste 1 teaspoon avocado oil
  • 1⁄2 teaspoon sea salt 

For the spicy mayo

  • 1⁄2 cup mayo or vegan mayo 1 tablespoon sriracha

To serve

  • 1 cup Jasmine rice, cooked
  • Butter lettuce or little gem lettuce
  • 1 Persian cucumber, thinly sliced
  • 1 avocado, sliced
  • 2 teaspoons furikake 

Instructions

  1. Preheat your air fryer to 400F degrees.

  2. Cut the salmon into 1-inch cubes and transfer the pieces to a bowl. Add the Thai & True Prik-King Curry Paste, avocado oil and sea salt and stir to coat.

  3. Arrange the salmon pieces in a single layer in your air fryer basket. Air fry the salmon for 8 to 10 minutes, until browned and a little bit crispy on the edges.

  4. Meanwhile, mix together the mayo or vegan mayo and sriracha in a bowl. Set aside.

  5. To serve, divide the cooked Jasmine rice between two shallow bowls. Top with lettuce, cucumber, avocado and crispy salmon pieces. Sprinkle everything with furikake and drizzle the spicy mayo over the salmon.
