Sweet and Spicy Chicken Meatballs
Serves 2 to 3
Ingredients
- 1 pound ground chicken
- 1 egg
- 2 tablespoons toasted sesame oil
- 2 scallions, finely chopped (plus more for serving)
- 3 garlic cloves, peeled and grated
- 1 tablespoon fresh ginger, peeled and grated
- 1 cup panko breadcrumbs
- ½ teaspoon salt
- ½ cup Thai & True Sweet Hot Chili Sauce (plus more for serving)
- 1 tablespoon soy sauce
- ½ tablespoon honey
- Cooked jasmine rice, for serving
- Toasted sesame seeds, for serving
Instructions
- Preheat your oven to 400F degrees and line a large baking sheet with parchment paper.
- Place the ground chicken in a large mixing bowl. Add the egg, toasted sesame oil, scallions, garlic, ginger, panko breadcrumbs, and salt. Use your hands to mix the ingredients together until well combined.
- Roll the mixture into balls and place on the prepared baking sheet. Bake the chicken meatballs for 20 to 25 minutes, until golden.
- Heat the Thai & True Sweet Hot Chili Sauce in a saucepan over low heat. Add the soy sauce and honey and whisk to combine. Continue to simmer over low heat until the sauce has thickened slightly, about 8 minutes. When the chicken meatballs are done baking, transfer them to the saucepan and toss gently to coat.
- Spoon the Sweet and Spicy Chicken Meatballs over cooked jasmine rice and garnish with more Thai & True Sweet Hot Chili Sauce, sliced scallions, and toasted sesame seeds. Enjoy warm.
