Sweet and Spicy Chicken Meatballs

 

Serves 2 to 3

Ingredients

  • 1 pound ground chicken
  • 1 egg
  • 2 tablespoons toasted sesame oil
  • 2 scallions, finely chopped (plus more for serving)
  • 3 garlic cloves, peeled and grated
  • 1 tablespoon fresh ginger, peeled and grated
  • 1 cup panko breadcrumbs
  • ½ teaspoon salt
  • ½ cup Thai & True Sweet Hot Chili Sauce (plus more for serving)
  • 1 tablespoon soy sauce
  • ½ tablespoon honey
  • Cooked jasmine rice, for serving
  • Toasted sesame seeds, for serving

Instructions

  1. Preheat your oven to 400F degrees and line a large baking sheet with parchment paper.
  2. Place the ground chicken in a large mixing bowl. Add the egg, toasted sesame oil, scallions, garlic, ginger, panko breadcrumbs, and salt. Use your hands to mix the ingredients together until well combined.
  3. Roll the mixture into balls and place on the prepared baking sheet. Bake the chicken meatballs for 20 to 25 minutes, until golden.
  4. Heat the Thai & True Sweet Hot Chili Sauce in a saucepan over low heat. Add the soy sauce and honey and whisk to combine. Continue to simmer over low heat until the sauce has thickened slightly, about 8 minutes. When the chicken meatballs are done baking, transfer them to the saucepan and toss gently to coat.
  5. Spoon the Sweet and Spicy Chicken Meatballs over cooked jasmine rice and garnish with more Thai & True Sweet Hot Chili Sauce, sliced scallions, and toasted sesame seeds. Enjoy warm.
