Sweet and Spicy Glazed Carrots (V)
Serves 2 to 3
Ingredients
- 1 pound of carrots, peeled
- 1 tablespoon avocado oil
- Sea salt and black pepper
- ¼ cup Thai & True Sweet Hot Chili Sauce
- 2 teaspoons soy sauce
- 2 garlic cloves, finely chopped
- 1 teaspoon toasted sesame seeds, for serving
- Fresh cilantro, chopped, for serving
Instructions
- Preheat your oven to 425F degrees and line a baking sheet with parchment paper. If you’re using large carrots, slice them in half lengthwise.
- Toss the carrots with olive oil and sprinkle with sea salt and black pepper. Roast the carrots for about 15 minutes, until cooked but not soft.
- Meanwhile, make the sweet and spicy glaze. Mix the Thai & True Sweet Hot Chili Sauce, soy sauce, and garlic in a bowl. Set aside
- When the carrots are done, remove them from the oven and drizzle the glaze over the carrots. Toss gently with a spatula to coat. Return the carrots to the oven for 5 or 6 minutes longer, until the carrots are fully cooked and the glaze has become sticky and golden, but not burnt.
- Remove the carrots from the oven and transfer to a serving platter. Sprinkle with toasted sesame seeds and garnish with fresh cilantro. Enjoy at room temp.
