Spicy Glazed Sweet Potatoes

Ingredients
- 3 tablespoons avocado oil
- 1½ tablespoons honey or maple syrup
- 2 to 3 teaspoons Thai & True Sarachee Hot Sauce
- 2 teaspoons soy sauce
- 1 pound of sweet potatoes, sliced into wedges
- Flaky sea salt, for serving
- Fresh herbs, for serving (basil, mint, cilantro)
Instructions
- Preheat your oven to 400F degrees and line two baking sheets with parchment paper or silicone baking mats.
- Pour all of the glaze ingredients in a large mixing bowl and whisk to combine.
- Add the sweet potato wedges to the bowl and toss to coat each piece.
- Use a slotted spoon to transfer the sweet potato wedges to the prepared baking sheets, leaving excess glaze behind in the bowl. Arrange the sweet potato in a single layer across both sheets, taking care not to overcrowd the pans.
- Roast the sweet potato for 18 minutes. Flip the wedges and drizzle with the remaining glaze left behind in the bowl and roast for 5 to 7 minutes more, until the sweet potatoes are golden and caramelized.
- Remove the sweet potato wedges from the oven and sprinkle with flaky sea salt and fresh herbs. Serve warm as a side dish or with your favorite protein in a rice bowl or salad.
