Sweet and Spicy Glazed Carrots (V)

Serves 2 to 3

Ingredients

  • 1 pound of carrots, peeled
  • 1 tablespoon avocado oil
  • Sea salt and black pepper
  • ¼ cup Thai & True Sweet Hot Chili Sauce
  • 2 teaspoons soy sauce
  • 2 garlic cloves, finely chopped
  • 1 teaspoon toasted sesame seeds, for serving
  • Fresh cilantro, chopped, for serving

Instructions

  1. Preheat your oven to 425F degrees and line a baking sheet with parchment paper. If you’re using large carrots, slice them in half lengthwise. 
  2. Toss the carrots with olive oil and sprinkle with sea salt and black pepper. Roast the carrots for about 15 minutes, until cooked but not soft. 
  3. Meanwhile, make the sweet and spicy glaze. Mix the Thai & True Sweet Hot Chili Sauce, soy sauce, and garlic in a bowl. Set aside
  4. When the carrots are done, remove them from the oven and drizzle the glaze over the carrots. Toss gently with a spatula to coat. Return the carrots to the oven for 5 or 6 minutes longer, until the carrots are fully cooked and the glaze has become sticky and golden, but not burnt. 
  5. Remove the carrots from the oven and transfer to a serving platter. Sprinkle with toasted sesame seeds and garnish with fresh cilantro. Enjoy at room temp.
